Tentsuyu (Tempura Dipping Sauce)

A light, savory dipping sauce made from dashi, soy sauce, and mirin, traditionally served with Japanese tempura.

Ingredients

  • 1 cup dashi
  • 1/4 cup soy sauce
  • 1/4 cup mirin
  • 1/2 teaspoon sugar optional
  • Grated daikon optional for garnish
  • Grated ginger optional for garnish

Instructions

  • Combine dashi, soy sauce, mirin, and sugar in a small saucepan.
  • Simmer gently for 2–3 minutes.
  • Remove from heat and let cool slightly.
  • Pour into serving bowls.
  • Add grated daikon or ginger if desired.
  • Serve warm or at room temperature with tempura.
