1egg yolk
1tbspcornstarch
Vegetables
2cupsgreen beans – blanched for crisp texture
1cupbutton mushrooms sliced
3clovesgarlic minced
Stir-Fry Sauce
2tbspsoy sauce
1tbspoyster sauce
1tspbrown sugar
2tspcornstarch mixed with 2 tbsp water slurry
1tspsesame oil
For Cooking
2tbspvegetable oil or neutral oil for high-heat stir-frying
Instructions
Step 1: Marinate and Velvet the Pork
Slice pork loin or shoulder into thin strips.
In a bowl, mix soy sauce, Shaoxing wine, garlic powder, egg yolk, and cornstarch.
Add pork and coat evenly. Let marinate for 20 minutes.
Step 2: Blanch the Green Beans
Boil water and blanch green beans for 2 minutes. Drain and set aside.
Step 3: Cook the Pork
Heat a wok or skillet over high heat with vegetable oil.
Stir-fry the marinated pork until lightly browned. Remove from the wok and set aside.
Step 4: Stir-Fry the Vegetables
In the same wok, add more oil if needed.
Stir-fry garlic until fragrant.
Add mushrooms and cook until tender. Toss in green beans and stir well.
Step 5: Combine Everything
Return the pork to the wok.
Pour in the stir-fry sauce and mix until evenly coated.
Cook for 1–2 minutes until the sauce thickens.
Step 6: Serve hot over steamed jasmine rice or noodles.
