Ingredients

  • 2 large eggs separated
  • 2 tablespoons sugar
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract
  • 1/4 cup cake flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon cream of tartar or lemon juice
  • 1 teaspoon oil

Instructions

  • Separate eggs into two bowls.
  • Whisk yolks with milk and vanilla.
  • Sift in flour and baking powder; mix well.
  • Beat egg whites with cream of tartar until foamy.
  • Add sugar gradually and whip to stiff peaks.
  • Fold meringue into batter gently.
  • Heat pan on low and lightly oil.
  • Add 3-4 tablespoons of batter in tall mounds
  • Cover and cook 4–5 minutes.
  • Flip and cook another 4–5 minutes.
