Chinese Winter Melon Soup (Dong Gwa Tong)

A light and nourishing Cantonese winter melon soup made with pork or chicken and minimal seasoning for a clean, comforting broth.

Ingredients

  • lb winter melon peeled and cut into chunks
  • 1 lb pork ribs or chicken
  • 4 slices fresh ginger
  • 2 cloves garlic
  • 8 cups water
  • 1 tsp salt or to taste
  • ¼ tsp white pepper
  • 2 scallions sliced

Instructions

  • Blanch pork ribs or chicken for 2–3 minutes, then rinse clean.
  • Add protein, ginger, garlic, and water to a large pot and bring to a boil.
  • Reduce heat and simmer for 30 minutes.
  • Add winter melon and simmer another 15 minutes until translucent.
  • Season with salt and white pepper.
  • Garnish with scallions and serve hot.
