Chicken Chow Mein (Easy Chinese Takeout-Style Noodles)

Ingredients

  • 1 lb boneless skinless chicken breast thinly sliced
  • 12 oz chow mein noodles
  • 2 tablespoons neutral oil
  • 3 cloves garlic minced
  • 1 teaspoon fresh ginger grated
  • 2 cups shredded green cabbage
  • 1 cup bean sprouts
  • 1 medium carrot julienned
  • 1/2 cup button mushrooms sliced
  • 3 green onions sliced

Chicken Marinade

  • 1 tablespoon soy sauce
  • 1 tablespoon cornstarch
  • 1 teaspoon sesame oil

Chow Mein Sauce

  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon hoisin sauce
  • 1 teaspoon sugar
  • ½ teaspoon white pepper
  • ¼ cup chicken broth or water

Instructions

  • Marinate chicken for 10 minutes.
  • Cook noodles according to package directions; drain.
  • Stir-fry chicken over high heat until just cooked; remove.
  • Sauté garlic and ginger briefly.
  • Add vegetables and stir-fry until crisp-tender.
  • Return chicken, add noodles and sauce.
  • Toss until well coated and heated through.
  • Garnish with green onions and serve hot.
