Ingredients

  • 2 pounds boneless skin-on chicken thighs
  • ½ cup soy sauce
  • ½ cup mirin
  • ¼ cup sake
  • 2 tablespoons sugar
  • 1 tablespoon neutral oil
  • 2 green onions sliced (optional)
  • 1 teaspoon sesame seeds optional

Instructions

  • Pat chicken thighs dry.
  • Heat oil in a skillet over medium heat.
  • Cook chicken skin-side down for 5–7 minutes until crispy.
  • Flip and cook 4–5 minutes more.
  • Mix soy sauce, mirin, sake, and sugar.
  • Add sauce to skillet.
  • Simmer and glaze chicken, turning frequently, for 3–5 minutes until thickened.
  • Slice chicken and spoon sauce over top.
  • Garnish and serve with steamed rice.
